Restaurant Cheval Blanc is located inside the 5-stars Grand Hotel Les Trois Rois at the very heart of the city of Basel. At the exact spot where, in the Middle Ages, the ships docked at the salt tower to transport that much sought-after product down the Rhine (river) and out into the world.

 

The restaurant takes its name from the famous Bordeaux wine Cheval Blanc which Chateau is in the commune of Saint-Emilion on the border of Pomerol. What makes the wine Cheval Blanc so unusual is three main soil types; fine textured with clay, more coarsely textured with gravel, and large gravel with sand, that constitute a veritable patchwork.

Chef de Cuisine Peter Knogl has been part of Cheval Blanc since 2007 and the restaurant has had three Guide Michelin stars since 2015.

The food served is described as French haute cuisine, reinterpreted with Mediterranean and Asian influences.

The tasting menu called Menu des Rois have two different options (as of January 2019):

  • 6 courses a 250 CHF
  • 5 courses a 220 CHF

 

 

In summary:
Cheval Blanc is a definitely a world class restaurant with a plethora of aromas, colors and harmonious tastes. First class ingredients with a cooking based in the French haute cuisine kitchen with Mediterranean and Asian influences suits my taste buds very well! Highly recommended!
